凍飲引出小肚腩?
夏日天氣熱到人也快溶掉,想消暑的話,你會選擇凍飲還是熱飲?大部份人都想要冰凍飲品吧?!凍飲喝下去一刻好像感到暑氣全消,從中醫角度來看,冰塊確有消暑功效但要適可而止,凍飲屬生冷食物,多喝凍飲會損傷陽氣,脾胃運化水液的功能全憑陽氣推動,所以凍飲會使脾胃運化水液功能減退,加重體內寒濕,慢慢就會形成小肚腩,亦容易導致經痛、水腫、黑眼圈、臉色暗啞等問題。
一時間未能完全戒除凍飲的話,可以由轉飲走冰、常溫飲品開始,如在室內有冷氣的環境,其實喝一杯暖飲也很舒服,尤其使用消暑食材炮製的飲品,既消暑又養生,下次吃西瓜時剩下西瓜皮可以留起,用來煲西瓜冬瓜皮水消消暑吧!
自煮消暑飲品 — 西瓜冬瓜皮水
材料:西瓜皮約300克(整個小西瓜皮或半個大西瓜皮)、冬瓜連皮約300克(一斤)、生薏米30克、綠豆20克、片糖適量
做法:
1. 所有材料洗淨。西瓜皮把最外面一層綠色皮切走,只留下白色部分,切塊備用。冬瓜連皮去核,切塊備用。
2. 鍋內加入2000毫升水,加入所有材料,武火煮至水滾,改文火煮30分鐘, 調入適量片糖即可。

Does drinking cold beverages cause big belly?
The summer heat literally causes us to ‘melt’. In order to dissipate heat, would you opt for cold or hot drinks? Most people, I guess, would go for a cold beverage? Drinking cold beverages may seem effective in getting rid of body heat, but from the perspective of Chinese medicine, ice cubes, albeit helpful in clearing heat, should not be consumed excessively.
Cold beverages belong to the uncooked and cold food category. Drinking cold beverages excessively will damage the yang energy, and hence take a toll on the circulation of fluids at the spleen and stomach. Consequently, this will increase the dampness in the body, and eventually cause the formation of a belly bulge, as well as problems such as menstrual pain, water retention, dark eye circles and dull facial skin.
If you are unable to give up on cold drinks completely, try beverages that have been ice-chilled or at room temperature. If you are in an air-conditioned environment, try enjoying a cup of warm drink. You may consider using healthy and heat-relieving ingredients to make drinks. Why not try boiling watermelon and winter melon skin with water and enjoy the drink to clear body heat!
Watermelon Peel Winter Melon Water
Ingredients: 300g Watermelon rind (approx. one whole small watermelon or half of a large one), approx. 600g winter melon with skin (1 catty), 30g coix seed, 20g mung beans, slab sugar to taste
Preparation:
1. Rinse all ingredients thoroughly. Cut off the outer green peel of watermelon rind, with white portion remaining and cut into pieces. Remove seeds from winter melon, keeping the skin and cut into pieces.
2. Add 2000ml of water into pot, add in all ingredients and cook on high heat until boiling, then simmer on low heat for 30 minutes. Add sugar to taste.

健脾開胃節瓜湯
天氣炎熱,容易令人心情煩躁、食慾不振,大家都多吃雪糕喝凍飲企圖去消暑,其實多吃生冷食物會損傷脾胃功能,脾濕加重,食慾差的問題會雪上加霜,濕重更令人感覺懶洋洋不願動。這個時候不妨多喝有益湯水調理體質,例如用夏天當造的瓜果煲湯,節瓜性平,有利水消腫、健脾益胃的功效,它是冬瓜的一個變種,但不似冬瓜般寒涼,身體偏寒、體質較弱的人也適合飲用。配搭有滋陰補腎、調補脾胃功效的瑤柱,以及有健脾益腎作用的淡菜乾,調理好脾、胃、腎的功能,有助改善無胃口的情況。
健脾開胃湯水小貼士:
適當地添加健脾開胃功效的食材如佛手瓜、粟米、淮山、白扁豆、茨實等。
節瓜瑤柱雞腳湯
功效:健脾開胃,紓緩無胃口、食慾減退等症狀。
材料:節瓜2-3根、瑤柱4枚、雞腳4隻、淡菜乾25克、西施骨3塊
做法:
1. 所有材料洗淨,節瓜切塊,西施骨及雞腳汆水備用。
2. 鍋中加入2500毫升水,放入全部材料,武火煮至水滾,調文火煮2小時,最後下鹽調味即可。

Hairy Gourd Soup to stimulate appetite
The hot weather tends to have people feeling agitated and decrease their appetite. Most people would eat ice cream and drink cold drinks to cool off. But in fact, frequent intake of cold food and drinks will damage the spleen and stomach functions, increase the dampness in the spleen, and further worsen the already poor appetite. Increased dampness would also make people feel more fatigued and reluctant to move. During these times, one can drink more nourishing soup to condition the body and recuperate. For example, cooking soup with seasonal gourds in the summer.
Hairy gourd is mild in nature and effective in reducing fluid retention, strengthening the spleen and stomach. It is a variant of winter melon, but not as cold in nature as the winter melon, even the people with a cold-natured or weak body can eat it. If taken together with scallops that help to nourish the ‘Yin’ energy, and condition the kidney, spleen and stomach; as well as dried mussels that strengthen the spleen and kidney, hairy gourd can help to stimulate appetite by regulating and conditioning the spleen, stomach and kidney function.
Tips for soup to strengthen the spleen and stimulate appetite:
Appropriately add in ingredients such as chayote, corn, Chinese yam, hyacinth bean, fox nuts
Hairy gourd soup with dried scallop and chicken feet
Effects: strengthens the spleen and stimulates appetite, relieves lack of appetite.
Ingredients: 2-3 hairy gourds, 4 dried scallops, 4 chicken feet, 25g dried mussel, 3 pieces of pork rib
Preparation:
1. Rinse all ingredients thoroughly. Peel hairy gourd and cut into pieces. Add chicken feet and pork rib to pot of cold water for blanching, cook until boiling and then turn to low heat for a few minutes.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1 hour. Add salt to taste.

天氣漸熱,大家也感受到夏天的來臨了,從中醫角度來看,春夏交替,肝氣漸弱,心氣漸強 。夏天屬火,與心相應,養生重點要轉移到養心之上,養心需要靜養,正所謂「心靜自然涼」,靜則生陰,所以在夏天要適當調節心情,不宜過喜過悲,因為「過喜傷心」。夏天宜減慢生活節奏、避免進行太激烈的活動,「汗為心之液」,出汗太多易耗氣傷津,運動後要多喝水即時補充水分。運動宜選擇行山、散步、慢步等較溫和的運動,以避免大量出汗。
夏季飲食宜清淡,不宜經常飲食重口味食物如煎炸油膩、芝士奶蓋等,也不應過分進補;另外天氣炎熱令人想喝冰凍飲品和吃雪糕解暑,這些冰品的確能帶來一時的快感,但生冷食物易傷脾胃,宜按體質適量進食清熱利濕的食物消暑,例如冬瓜、西瓜、青瓜、絲瓜等。

Calm the heart and mind in summer
It is becoming warmer which tells us that summer is coming. From the perspective of Chinese Medicine, as you go from spring to summer, liver qi may weaken, and heart qi will strengthen. Eat lighter and less cold/raw food to reduce the burden on the spleen and stomach to prevent digestive issues that tend to happen during the summer. Summer corresponds to fire and heart. The focus of healthy living should be shifted to nourish the heart. The heart needs to be nourished gradually. Try to adjust your mood appropriately to avoid being overly happy or sad as the extremes can hurt your heart. Slow down in summer and avoid doing intense activities. ‘Sweat is the heart’s fluid’. Excessive sweating will result in loss of qi and fluid. Drink plenty of water right after exercising. You should do mild exercises such as hiking, taking a walk, jogging, etc. to avoid over sweating.
The summer diet should be light. Do not always drink and eat thick sauced foods such as fried and oily food or cheesy tea, and do not eat too much tonic foods. The hot weather makes people want to drink cold drinks and eat ice cream to clear the summer heat, these ice products can bring you temporary relief, but cold/raw food may hurt the spleen and stomach. You should appropriate consume ingredients that can clear the heat and dispel dampness to relieve the summer heat, such as winter melon, watermelon, cucumber, luffa.

Effects: gives a rosy complexion, calms the mind and improves sleep, replenishes blood and nourishes the stomach

For this video, I went down to Little Sheep Hot Pot at Orchard Gateway to treat myself to over $1300 worth of premium hotpot food! Little Sheep is a hot pot-style restaurant chain that specialises in various prime cuts of meat, especially lamb. It does not offer a buffet option as many hotpot places do, but provides high-end ala carte choices for the hungry customer.
We ordered 4 different broths: a traditional herbal broth, which comprised of over 20 spices and aromatics, with numerous whole cloves of garlic floating on top and designed to eliminate any “gamey” flavour and smell from lamb; a spicy mala broth that was deep red due to a thick layer of chilli oil on top and with bits of dried chillies and Szechuan peppercorns with every ladleful; a tomato broth that was akin to a rich tomato soup and a mushroom broth that had a deep concentrated mushroom umami flavour.
Personally, I found the meat went best with the traditional broth which was wonderfully flavourful and complemented the meat well and it was worth alternating with the mala broth which had a decent kick to it but was not overpoweringly spicy. The mushroom and tomato broths seemed slightly out of place to me, though certain cuts of meat, like the beef, paired very well with them. I thought they would be better off being consumed on their own as appetisers.
The star of the feast was of course, the choice cuts of meat given, including supremely marbled wagyu beef, richly flavoured kurobuta pork and invitingly aesthetic lamb. Every piece of meat was gorgeously presented and thinly shaven, so they cooked within seconds in the simmering cauldron of ambrosial broth, with barely any chewing needed to swallow the cooked pieces. We also tried their lamb and beef kebabs which were heavily spiced and beautifully grilled on a barbeque, resulting in explosions of earthy flavour and a slight spicy note with every bite. To round off the meal, we sampled a few of their in-house drinks; Draft Denmark, a beer which was mildly flavoured and easy on the palate; winter melon tea, which was refreshingly sweet and calamansi juice that offered a sour bite for those who enjoy it.
All in all, it was a fantastic experience and I would recommend it to all whose wallet permits.

How cold it seems in Japan in the winter depends on the climate where you live. I went to Japan in February and for me, coming from the UK, winter in Tokoy felt mild. There were actually some pretty warm days. As you go north, it starts to get snowy, and Hokkaido's the coldest place I've ever been! We stopped over in Hakodate before going to Sapporo for the Snow Festival. Also known as spiced wine, vin chaud, glühwein, mulled wine is a traditional drink during winter, especially around Christmas. It usually made with red wine along with spices, orange and lemon and served hot or warm.
Making mulled wine couldn’t be easier. Just combine the spice you like, red wine, orange, sugar, and bring it to a boil, then reduce to low heat to simmer for 10 minutes. It’s down. If you’ve never had this for holidays. It’s time to make one to warm you during winter. Here’s a recipe for simple Mulled Wine, hope you enjoy it. :)

Simple and Perfect Mulled Wine Recipe
☞ Yields: 2 Servings
✎ Ingredients
red wine 500ml
orange 1
lemon 1
whole clove 3
cinnamon stick 1
star anise 1
ginger 3 small pieces
nutmeg 1
granulated sugar 60g
black pepper 1g
honey 10g
✎ Instructions
1. Pour the wine into a pot, allow to decant for a while.
2. Cut off the top and bottom ends of the orange. Hold and roll the orange around in hand with a smooth, even motion. Slice off the skin in strips until the peel naturally cuts off.
3. Slice the skin of lemon in the same way.
4. Collect all peels and put them in a bowl. Set aside.
5. To minimize bitterness, remove the white pith of orange and lemon by knife.
6. Combine sugar and all spices in a dry saucepan over a med-low heat. Stir evenly for 1 minute, then as soon as you can smell the flavor.
7. Twist all citrus rinds to release aroma before drop them into the pan.
8. Making syrup. Squeeze one orange and half lemon to get the juice. Stir well and bring to a boil.
9. Pour the red wine, and bring it to a boil again, then reduce the heat to low, let it simmer for 10 minutes.
10. Time’s up. Remove from heat and strain through a fine mesh sieve.
11. Take a lime and rub on the glass for extra flavor and coated with salt. Pour the hot spices red wine, topped with your favorite garnishes. Enjoy.
